Kay’s recipe of the month: Pumpkin or Butternut Pie

INGREDIENTS:

  • 125g butter
  • ½ cup (125ml) yellow or brown sugar
  • 3 eggs
  • 2 cups (500ml) cooked pumpkin or butternut mash
  • ½ cup (125ml) cake flour
  • 1 Tbsp(15ml) baking powder
  • 1 cup (250ml) milk
  • Ground cinnamon to sprinkle

METHOD:

Preheat the oven to 108 degrees Celsius.

Grease an ovenproof dish

Beat the butter and sugar in a bowl until creamy.

Add the eggs and beat well and then mix in the pumpkin or butternut mash. Set aside

Sift the flour and baking powder together.

Now add a little bit of the flour mixture and some of the milk to the pumpkin or butternut and beat well.

Add a little more, beating well after each addition, until all the flour and milk are mixed in.

If you can, use a stick-blender to blend the mixture to a creamy consistency (it makes the pie light and fluffy)

Put the mixture in the greased dish and sprinkle generously with cinnamon.

Bake for 1 hour.
